|Shopping List||2 tsp Fish rub
300g Fish medium chunks
100g Besan or gram flour
120ml Cold water
1⁄4 tsp Salt
1tsp Fresh coriander chopped (optional)
Oil to fry
Fresh lemon wedges
|Cooking Instructions||Put all the ingredients (apart from the fish) in a bowl and slowly whisk in water to prevent any lumps from forming, making a smooth batter.
Add the fish and ensure it is coated with the batter.
Heat the oil in a wok or a deep frying pan.
Fry the fish, a few at a time for about 5 minutes until golden and crisp.Serve with lemon wedges.
