Spicy Roast Vegetables

Shopping List 2 tsp Bombay Potato Rub
2 Medium sweet potatoes
2 Medium carrots
1 Pepper
1 Red onion
2 tbsp Oil
Serves 2
Cooking Instructions Peel and cut all vegetables into chunks.
Mix all the vegetable together with the oil and Bombay Potato Rub.
Place on a baking tray, cover with foil and cook in the oven on gas mark 7 or 425f/220c for about 40 to 50 minutes or until the vegetables are tender.Serve as a main course or on its own as a side dish with your favourite meat or fish.
